I believe he was wearing his helmet during offensive drives in order to hear the calls going out to Case.

A buddy of mine at the last game said Schaub often took his helmet off during breaks and when the Texans defense was on the field.

I just wanted to point out that I saw that Keenum wore his helmet on the sideline to listen to the play calls when Schaub took over. This helmet thing was over-blown, as many suggested.
