I eventually want to make my first mock this offseason. ive never made a full one. For now though.. here is a couple of "Texans mocks" showing just our picks.

1st Mock: The Reggie Bush Draft

1) Reggie Bush (RB)
33) Daryn Colledge (OT)
65) Davin Joseph (OG)
66) Gabe Watson (DT)
97) Cedric Griffin (CB)
129) Mark Setterstrom (OG)
161) Jabari Levey (OT)
193) Erik Gill (TE)

2nd Mock: The Denver Trade Mock (#1 for their 2 firsts and second) There would be more to the trade..but I doubt they would give up more than this in first day picks. Perhaps give us a player, or a 1st next year. After getting so close to the superbowl.. i imagine they may consider trading for the #1 pick to get Bush and that extra oomph they need to surpass the Colts.

Ok.. some notes.

a) Vernon Davis will probably raise his draft stock at the Combine and go earlier than 22. He is a workout Warrior. Same for Thomas Howard.

b) Erik Gill may be a stretch in the 6th round.. he is possibly/probably a 7th rounder or undrafted free agent... I actually know nothing about him.. but he is a 275lb TE who played well enough to show up on the bottom of draft charts..and that makes me think about the Denver Olinemen.

c) Davin Joseph may very well not be available at the 62 or 66 spot.. i see alot of mocks having him go in the middle/top of the 2nd. Im hoping that his size will lower his stock a bit at the combine.

d) Im also not sure on the Jabari Levey pick. I know very little about him actually.. but I knew less about some of the other prospects that would be available in hte 5th, so i went with him.
 
For one, I agree with your note that I really doubt Davin Joseph will be available in the 3rd round, but I think he'd be a nice pickup in the 2nd (or 3rd if he did somehow fall that far), and would fit into Kubiak's (assuming he is our HC) system very well. I also don't see Denver trading with us, they frequently don't have 1st round picks and do love trading, but I don't see any reason for them to move up to #1. However, as I posted in a couple draft threads, if we trade down with someone else (Jets I think are most likely to want to trade and are in a position to trade with us), and we pick up another 3rd round pick, I think we could trade those three 3rd rounders to Denver and get their 22nd pick if we decide we want to go after someone like Michael Huff or any other guy like that who would be available there, because the Broncos historically love grabbing 3rd round picks and trading off their 1st rounders, so I think that would be a situation we could look at if we want to move back in and grab someone in the later part of the 1st round (could go for Eric Winston if he somehow falls that far, and then grab Mario Williams at #4).

trading the #1 pick for 2 low 1st round picks and a 2nd round pick?

from what you have that is trading a 5 star prospect at rb or qb (bush or young) for a 4-5 star TIGHT END prospect (who wouldnt even be available where you have him picked) and then a bunch of 3-4 star prospects in which casserly would probably miss on. we have had basically ZERO success picking late in the 1st round - 2nd round.

quality over quantity.
