Today's woot is a DVD recorder that I should be able to hook up to my entertainment system and copy the games off my DVR onto DVD. Does anyone have any experience getting DVR content onto a DVD?

Yes. Most recently, outputting high def. content down to 480i so that you can burn it onto DVD.

Is there anything I need to watch out for? I've never done this, and the sole reason I bought this thing is so I can offload the Texans games onto DVD and free up the DVR. I have deleted every season prior to this, and I'd like to save them.

Use the best output you got from the dvr into the best input you got on the recorder. I use HDMI both ways and it seems to work fine. I do not have a hi-def dvd recorder but it looks fine if the player will upconvert back.
